Roasted Potatoes with Bacon and Cheese

Baby Potatoes are sweet in flavor and are use in a variety of dishes ranging from salads, sides, stews and soup  They can be cook in a variety of ways: boil, fried, bake, roast, braise and barbecue. It may be added into frittatta, quiche, omelette, croquette and pies. 

Roasted Potatoes with Bacon and Cheese is an  easy recipe to make, perfect as a side dish with meat or on its own as a main course. However, there are few notes that we need to be reminded of. First. when washing the potatoes, place them in a bowl then rinse them with cool water. Use vegetable brush to remove excess dirt or use hands to rub the dirt off. Rinse them again before cutting in half. Second, when roasting the potatoes with the garlic,  stir them once in a while to evenly cook the potatoes  and to prevent them  from sticking in the pan.

Roasted Potatoes with Bacon and Cheese

300 g. baby potatoes, cut in halves
2 slices bacon, diced
3 cloves  garlic minced
salt and pepper to taste
2 stalks green onion, chopped
1/2 cup cheddar cheese, shredded

Heat pan over medium-high heat. Put in bacon, render out the fat and cook until crisp. Transfer bacon to a plate lined with kitchen paper towel to absorb the oil. 

Heat the same pan with the oil from the bacon over medium heat.  Add in potatoes and garlic. Stir fry for a few minutes then season with salt and pepper. Cover the lid to cook, turning the potatoes occasionally until the potatoes are tender and golden (approximately 15 mins).  

Transfer potatoes in a bowl, together with the bacon, green onion and cheese. Stir until well incorporated.
